

Crispy Salt & Pepper Whiting
INGREDIENTS
1 teaspoon fresh cracked pepper
1 teaspoon chilli flakes
1 tablespoon salt
¾ cup plain flour
2 egg whites
oil for deep-frying
500g AusCatch whiting fillets
1 small red chilli, finely sliced
2 shallots, finely sliced
¼ Cup Freshly chopped Parsley
1 Lime quartered

Preparation: 20 Minutes
METHOD
1. Place pepper, chilli flakes, salt & flour into a medium bowl, then mix to combine.

2. Place egg whites into a separate bowl and whisk until foamy.
​3. Heat oil in a large saucepan over medium heat until temperature reaches 180°C. Dip fish into the egg mixture, then dip in flour mixture, tossing to coat. Repeat with remaining fillets.
​4. Deep fry in batches for 1–2 minutes or until golden brown.

5. Remove fish using a slotted spoon and place on a wire rack to drain.

Serve
Sprinkle fillets with chopped chilli, shallots and parsley. Serve with lime wedges.
