Char-grilled stuffed squid with tomato

WWT Char-grilled stuffed Squid
with Fresh Tomato & Basil

Ingredients (serves 8)

10 WWT Whole Cleaned Lolligo calamari (Squid)
2 Anchovy fillets
4 tbsp of ORO Extra Virgin Olive Oil
2 garlic cloves
1 cup fresh Parsley
1 cup fresh Basil
1 cup Breadcrumbs
2 tbsp of grated parmesan cheese
Salt and pepper
SAUCE
2 large ripe tomatoes
4 tbsp of Extra Virgin Olive Oil
1 cup fresh Basil

METHOD – for STUFFING

Add to a food processor 2 anchovy fillets, 4 tbsp Extra Virgin Olive Oil, 2 garlic cloves, 1 cup fresh parsley and 1 cup fresh basil. Process these until finely chopped. Add to this mixture a cup of breadcrumbs, 2 tbsp of grated parmesan, salt & pepper for seasoning and two calamari bodies and all the tentacles (roughly chopped). Pulse the mixture to combine these extra ingredients. Stuff the remaining 8 calamari with this mixture, fixing the tentacles at the open end with a toothpick.

WWT Char-grilled Calamari SAUCE

Roughly chop the 2 large ripe tomatoes.
Heat a pan and add 4 tbsp Extra Virgin Olive Oil,
Tomatoes and remaining cup of fresh Basil, season with salt & pepper,
heat gently for 5-8 minutes or until excess liquid is reduced.
**Brush the calamari with Extra Virgin Olive Oil and grill or barbecue them. Serve the Stuffed Calamari with the sauce.**
